It’s hard not to notice that once the right number of white folks are affected, people want to take to the street. Unemployment numbers are high? We’ve had high unemployment for years. People are living in or near the poverty line? Yeah — we know.
When minorities speak up and say there is an issue, we are told maybe we are doing something wrong. Perhaps we are targeted by the police because of what we are wearing. Perhaps we don’t look for jobs the right way. Maybe we aren’t educated enough. But now that it’s affecting other folks, now there’s a problem. Now we need to come together and fight the power. Someone tweeted at me that we need to come together and not point out silly differences like race because we’re in this together!
Yes, we can — and have (there is support from various folks of color) — come together within this movement, but you can’t expect us to throw away “race” and ignore history. Even the violence that’s happening with the Occupiers right now is looked at differently because of race. You can’t be surprised that people have reservations about this when you look at how our issues have been dealt with before.
I’m not making an argument for ignoring the movement because a lot of the movement ignored us. But I am saying take a moment to walk away from your righteousness to understand that your newfound plight has been some people’s plight for generations.

Rolling out pie crusts for several hours is a tricep and ab workout. Rolling out lattice crust from 2nd-roll dough is tough, man. Yesterday we rolled out pie crusts, laid them out in pie tins, and trimmed the ends. We also rolled out lattice crusts (thinner than pie crusts) and cut them into strips. These all went into the walk-in fridge.
Today I prepped apples for apple toffee pie using one of those handy dandy apple slicer/peeler/corers and mixing the sliced apples with lemon juice, lemon zest, cinnamon, allspice, nutmeg, and salt. Very large bowls come in handy when you have enough apples for 10 pies. Afterwards I fluted some pies (getting smoother at this!) and started preparing the dough for gluten-free graham crackers (for g-f graham cracker crust), but I couldn’t manage to assemble the right combination of food processor base/bowl/lid/pusher before my shift ended.
I also learned how to lay out lattices! It’s more simple than I imagined. You start with the rolled-out pie crust, unfluted. You fill the pie (apples in this case) and lay out one strip of lattice (L1), from 1 o’clock to 7 o’clock. You the lay the second strip of lattice (L2) on top, from 11 o’clock to 5 o’clock. You lay the third and fourth strips parallel to L1, one above and one below. You then go back to L1 and fold back both ends toward the center (the 1 o’clock and 7 o’clock ends) so that they are temporarily out of the way. Lay down the fifth and sixth strips parallel to L2. Fold L1 ends back to the original positions. Trim the lattice strips so that they match with the border of the rolled-out pie crust, then roll the dough tightly inwards onto the lip of the pan. Flute.
Depending on the angle between L1 and L2, you can make diamond-shaped or square-shaped openings in the lattice. A more acute angle leads to a diamond shape, while a 90 degree difference leads to a square shape.

I don’t think it’s necessarily simple to make these distinctions, but these descriptions certainly help clarify how sexism and racism operate on level higher than person-to-person.
